Stuffed in a pita or tossed on a salad and served with veggies and sauce, these crunchy little spiced nuggets have only one downside: The Deep Fryer. To get them perfectly crunchy, you need to fry these guys, which can involve a lot of clean up.

Now, I don’t expect that there will be too many falafel street carts setting up with air fryers any time soon. It’s true that the falafel cooked this way doesn’t get 100 percent as crispy as a traditional deep-fry, but it’s very close.

Plus, the easy clean-up and use of less oil make it totally worth it. Falafel is traditionally made by soaking dried chickpeas and mashing them with spices, garlic, and a few other simple add-ins.

Shaped into balls or discs and deep-fried, they are a great vegetarian option stuffed in a soft pita. I like to make my falafel with canned chickpeas and pair them with crunchy veggies, lettuce, and a simple tahini sauce.

After you process your chickpeas together with your herbs, garlic, and spices, you need to shape them into a small unit. Typically, this takes the form of tablespoon-sized balls that get tossed in a deep fryer.

They lay flat in the air fryer basket and don’t roll around as they air fry and cook evenly. For my money (and it is my money, because I buy the groceries and my kids don’t have jobs yet), it’s hard to beat this crunchy, air -fried falafel stuffed in warm pita bread.

Tahini is basically a nut butter but made with sesame seeds rather than peanuts. This is an easy sauce to stir together right in a bowl, although you could use the food processor if you wanted to.

If you have leftover falafel discs, which you probably will because each pita sandwich takes about 4 to 5 falafel and this recipe makes about 30 falafel, they keep great in the fridge for 5 to 6 days or you can freeze them for longer storage in airtight tiptop bags. You could also reheat them in the air fryer a second time for a few minutes at a lower 300 FM if you want to bust it out again.

Alternative cooking options: If you don’t have an air fryer, you can do one of two things: Deep-fry them at 350 °F for about 4 minutes until they are golden brown on the outside.

Perfect on days you want to go meatless or just include more plant based foods in your diet. Because they are usually made from soaking dried chickpeas, they can be quite time-consuming to make.

The challenge using canned chickpeas is the inside comes out too soft, almost like a mashed potato texture. A few spritzes of olive oil before air frying makes them crisp on the outside and tender inside.

That’s pretty obvious, here in NY most street carts that sell them, they come in a pita with tomatoes, red onion and even pickles. The outer leaves of a head of iceberg lettuce, in my opinion make the best “wrap” because they are larger and easier to fold.

Place the onions and garlic in the bowl of a food processor fitted with a steel blade. Add the parsley, scallions, cilantro, cumin, salt, and red pepper flakes.

Sprinkle in the baking powder and the flour, scale the sides of the bowl down with a spatula and pulse 2 to 3 times. Form the falafel mixture into 12 balls, if it’s too sticky add some flour to your hands and your work surface.

Falafel is common in a sandwich of the Middle East, popular served in pita bread, and slathered with tahini, hummus, or hot sauce. Comprised of ground up chickpeas or lava beans, falafel is seasoned with onion, fresh herbs, and dried spices.

The ingredients are all good for you but usually falafel is deep-fried, adding lots of extra unhealthy fats. That got me to thinking about how to prepare falafel in a healthier fashion without sacrificing texture or taste.

I’ve used my air fryer to make all sorts of crispy goodies, without any added oil. I love air fryer French fries, chicken nuggets, and mozzarella stick s. Now I know it’s perfect for crispy falafel, too.

Put the drained beans in the bowl of the food processor, along with coarsely chopped onion, garlic, parsley, and cilantro. Don’t worry about picking off leaves from the herbs, small stems are fine since everything gets chopped up in the food processor.

Add flour and seasoning: cumin, salt, pepper, coriander, and cayenne. Place in an air fryer, sides not touching, spritz with olive oil spray, and “fry” for 12-14 minutes, turning once.

Falafel is traditionally served with hummus, tahini, or hot sauce. We love falafel with tzatziki,a refreshing yogurt cucumber sauce.
