If you make the mash mix too runny you won’t be able to form cohesive croquettes without resorting to adding flour. Having kitchen gloves on hand makes this otherwise messy process quick and easy by the way.

Place bread crumbs in another shallow bowl. Dip croquettes in egg mixture, then in bread crumbs, patting to help to coat adhere.

Then, drain potatoes in your colander and transfer to a bowl; mash using a fork. Add the cheddar cheese, egg, Parmesan cheese, flour, and sage in the bowl with mashed potatoes.

Scoop about 2 tablespoons of the potato mixture and form into small logs. Prepare the breading by placing the all-purpose flour, eggs, and breadcrumbs in 3 separate bowls.

Coat the potato mixture with flour, then eggs, and lastly breadcrumbs. Arrange the potato croquettes in the Air Fryer cooking basket evenly, but do not overcrowd.

You will love these Hairdryer Turkey Croquettes so much, that I suggest you make double the Easy Stuffing Recipe for Thanksgiving, just so that you have lots of leftovers. The Turkey and Stuffing Balls, are then lightly breaded and “fried” in the Hairdryer.

Wrap the Stuffing around the Turkey and roll it into a tight Ball or Cylinder. The Stainless Steel reflects my lights, so I just used white dishes to avoid the glare.

These Hairdryer Turkey Croquettes will be ultra crispy with a moist interior, as a result. I did add Freshly Ground Multi-Color Pepper to my Potato Starch.

The Pinko will add a second layer of crunch to the Thanksgiving Turkey and Stuffing Bites. You know it is an essential trick keep food from sticking and to make sure the Breading does not get stuck to the Basket and pull away from the Hairdryer.

Place the Basket into the Hairdryer and cook until nice and brown. Keep your eye on the Croquettes, as you may need to cook them longer, depending on the size.

Take approximately a golf ball amount of stuffing and place 2 teaspoons of Turkey in the middle. Seal Stuffing around Turkey and roll into tight Balls.

Make a Breading station of Potato Starch, Eggs and Pinko. Dredge one Turkey Croquette through the Potato Starch to completely coat.

Grease Air Fryer Basket with Coconut Oil. Spray each Croquette thoroughly with Oil Mister and place as many as can fit, leaving a little space between each Croquette, into Air Fryer Basket.
