Chef, restaurant owner and cookbook author Leah Cohen tapped into her Filipino roots to share a savory snack that's big on flavor and texture. To switch up the traditional preparation for her Lucia Shanghai, Cohen showed “Good Morning America” how to use an air fryer to achieve the same deep-fried crunch.

Add the garlic, ginger, water chestnuts, carrot, Spanish onion, soy sauce, sesame oil, salt, black pepper, chili flakes, and scallion and mix until combined. Fold in the left and right corners, making sure the filling is nicely packed, with no air pockets.

Dip you finger in egg wash, pat it on the remaining corner, and finish rolling the Lucia, sealing the edge. The Lucia can be made to this point and refrigerated, covered with a damp towel, for up to 8 hours or frozen in an airtight container.

When we finally went on that glorious visit to meet my almost-in-laws, I felt like an absolute total failure realizing just how little I knew about his background and Filipino culture.

In the back of my mind I could hear my Mama telling me, “You know the way to a man’s heart is through his stomach so you better step up your game girl.” That one Filipino restaurant is absolutely amazing but I wanted to bring in a little more culture into our home.

I started googling recipes and calling my sisters-in-law to get tips on how to create authentic Filipino dishes. My first dish attempt was the classic Filipino spring rolls known as Lucia.

The size of the roll can be altered for smaller more traditional Lucia as well, just use less meat filling. Lucia is a fried spring rolls made from chopped vegetables and minced meat.

It’s delicious and paired with a sweet chili sauce to give it just the right hint of tang with the meat. Skillet frying isn’t necessarily my favorite and I don’t even own a deep fryer, but I did have an air fryer that I’m obsessed with, so I figured I would give it a go.

The husband says it’s “islander approved” and even my kids picky eating friends like it- but shhh… I’m not supposed to tell their parents. Island styled egg rolls fried to perfection.

1 lb ground pork 1 lb ground beef 1.5 lbs shrimp chopped ½ c carrots shredded 1 c green onions chopped 8 garlic cloves peeled and minced ½ c yellow onions chopped 1 can water chestnuts chopped ¼ c soy sauce 1 tsp sesame oil salt/pepper to taste olive oil (optional for frying) Filling Mix Thoroughly cook the beef and pork.

Use a large bowl to combine all vegetables and water chestnuts. Then have meat mixture, a small bowl of water, and a platter for ones ready to go in the fryer.

1 tablespoon sesame oil 1 pound ground pork cup chopped water chestnuts 3green onions, chopped 4 tablespoons reduced-sodium soy sauce 2 tablespoons rice vinegar 3 cups shredded cabbage 2 large carrots, grated 18lumpia wrappers olive oil cooking spray Step 1 Heat oil in a large skillet over medium-high heat. Add pork and cook until browned, about 5 minutes, breaking it into small pieces.

Add water chestnuts, green onion, soy sauce, and vinegar; cook for 5 additional minutes. Step 2 Increase heat to high and add cabbage.

Step 4 Meanwhile, place a Lucia wrapper on a clean surface in a diamond shape, with one corner at the bottom. Step 5 Lightly mist each roll with olive oil.

This Fresh Lucia (Lumping Maria) with an egg wrapper and brown sauce is something that I’ve been wanting to recreate in my kitchen. The wrapper is what makes this different from fried Lucia since it is egg based with a crepe-like consistency.

I called my mom last Saturday, and she talked me through the ingredients that I would need for the wrapper and brown sauce. Take note that preparing the filling for this Lucia is a labor of love since each and every ingredient needs to be sliced but the end result is worth it.

I buy shredded carrots and cabbage which cuts down the prep work by 10-15 minutes. An easier version of this Fresh Lucia (called Lumping Hubei) omits the egg wrapper and the stir-fried filling is served with just the brown sauce.

4 tsp cooking oil (avocado or coconut oil) 1 small onion, chopped 6 cloves garlic, minced 5 c jicama, julienne 2 c potatoes, sliced 1 lb raw shrimp, peeled and cut into ½” pieces 3 c snow peas, julienne 3 c carrots, shredded 3 c cabbage, shredded ¼ tsp sea salt 1 tsp black pepper 1 tbsp fish sauce Add 2 teaspoons of oil to a wok or large Dutch oven over medium high heat.

In a large bowl, whisk together the eggs, oil, dissolved arrowroot and sea salt until thoroughly combined. Once it starts to simmer, slowly pour the dissolved arrowroot and whisk continuously until it thickens.

Assemble the fresh Lucia once the egg wrappers and filling are cool enough to handle. Place an egg wrapper on a plate and add about 1 cup of filling.

Pour a generous amount of brown sauce on top of the Lucia before eating! The original lumping shanghai recipe came from my mom who passed it on to Celia.

So instead of ground pork, we used in this recipe the push NG saying. Handling the push NG saying requires a bit of work.

It's not shown in the picture but when you buy the push NG saying, it has a color violet outer cover. As you can see in the second picture, the middle part is a hard portion which you can remove later while cutting the push NG saying.

Celia uses a lot of Magic Sarah before, until I told her that it has chicken fat. So I bought this vegetarian seasoning from Daily Veggies.

I wish for that day when more of these products will be produced locally, sold in our supermarkets and become more affordable. To seal the Lucia, dab the end of the wrapper with water so that it will be a bit sticky.

Before arranging in the air fryer, cut this in half with kitchen scissors. Arrange the Lucia in the air fryer as shown in the picture above.

Spray with a bit of cooking oil (optional). To match the lumping shanghai, I experimented with something I bought from Daily Veggies shown in the picture below.
