1 package (9 ounces) ready-to-serve quinoa or 1-3/4 cups cooked quinoa 2 large eggs, lightly beaten, divided use 1 cup seasoned bread crumbs, divided 1/4 cup shredded Parmesan cheese 1 tablespoon olive oil 2 tablespoons minced fresh basil or 2 teaspoons dried basil 1/2 teaspoon garlic powder 1/2 teaspoon salt 1/8 teaspoon pepper 6 cubes part-skim mozzarella cheese (3/4 inch each) Cooking spray Warmed pasta sauce, optional Stir in 1 egg, 1/2 cup bread crumbs, Parmesan cheese, oil, basil and seasonings.

Shape each portion around a cheese cube to cover completely, forming a ball. Place remaining egg and 1/2 cup bread crumbs in separate shallow bowls.

Combine the broccoli, potatoes, egg, cilantro, garlic powder, thyme, and quinoa. Form the vegetable mixture into small balls, about 2-3 tablespoons then flatten them to make patties.

I cannot adequately express in words the awesomeness that is these buffalo quinoa bites. When I decided to make this recipe, I figured there was NO WAY I could sell him on a vegetarian quinoa version of his most favorite food.

He did make his usual aw-shucks-no-meat face when I told him they were quinoa, but one or two bites later he was declaring his love for them. Finding such a well tested recipe online that we love and becomes part of our regular food rotation is such a great thing.

Lately I’ve been air frying a ton, and realized while making a batch of these for weekend snacks that they may just work in the air fryer. This led me to remember the goat cheese stuffed risotto balls I videoed for Chefs Catalog a while back and that’s when I knew that it was time for a quinoa bites upgrade.

I stuffed the middle of each quinoa bite with a lump of blue cheese. A built-in cooling blue cheese bite to counteract the spicy buffalo sauce.

I mean, I was stunned at how well they held their shape, how perfectly crispy the outside was, and how okay gooey, melty the cheese inside became. I’ve been a bit wary of all these new small kitchen appliances that have been coming out of the woodwork lately, but I have to admit that I am HOOKED on air frying.

In a large bowl combine the quinoa, mashed cannelloni beans, bread crumbs, egg, salt, pepper and 1/4 cup buffalo sauce. Rotate the balls and continue air frying for 8 more minutes until crispy.

5 Arrange the patties in a single layer in your Air Fryer basket. I cook 2 cups of quinoa during the beginning of the week and use it in all kinds of recipes.

This recipe is very forgiving and versatile, so the exact measurements aren’t that important. But the good thing is the short list of ingredients are everyday items you may already have around.

When it comes to turning quinoa into patties, you’ll need some binding ingredients. For a more smooth consistency, I would highly recommend grating the onions and any other vegetables going in here.

Next you’ll want to add some breadcrumbs to absorb all the moisture, and give it a good mix. Once you form the patties, feel free to add more breadcrumbs, more cheese or more water if you find the mixture is too dry.

I have instructions below for both methods, although I prefer frying the quinoa patties. You’ll only need a tablespoon of oil, so the edges will be lightly fried, but get nice and crispy.

To make the avocado yogurt dip, you’ll only need three ingredients plus salt and pepper. But I love making extra and using this throughout the week as salad dressing or on top of chicken or fried eggs or even on toast.

Serve the avocado yogurt sauce with the quinoa patties for a delicious appetizer or side dish. Make these quinoa patties for any occasion and any time of year.

They’re additively cheesy, delicious and make for a healthy snack or appetizer! And the great thing about them is you can make them ahead and freeze to have ready for the right occasion.

Combine quinoa, eggs, salt and pepper in a medium bowl. Season with salt and pepper and serve with the cooked quinoa patties.

To freeze them prior to cooking, lay them on a flat baking dish in the freezer for at least 4 hours. To freeze them after cooking, simply store them in an airtight bag after they've cooled.

Equipment : I love using my Cuisinart Smart Stick mini blender for making dips. It's quick and easy and gets me the perfect consistency, without any chunks of avocado and cilantro leftover.
