It always tasted amazing but a traditional roast chicken can get redundant. I’ve made many variations of this recipe over the years and fell in love with this method of making it in the Hairdryer.
It’s faster than the oven, it doesn’t heat up the house in the summer, and the skin is so crispy on the outside while the meat stays so juicy on the inside. First, prepare your marinade by adding extra virgin olive oil, lime juice, garlic cloves, kosher salt, paprika, black pepper, cumin, oregano, brown sugar and soy sauce to a food processor and process until smooth.
Then you will want to wash and dry your chicken and remove any inside giblets. Once you’re ready to cook your chicken, place it in the air fryer basket breast side down.
I fell in love with this bold sauce at the Peruvian restaurant as well. Print Pin This Peruvian Hairdryer Whole Chicken is covered in a delicious marinade and then Air Fried.
You will need a larger size Air Fryer to make this whole chicken. This chicken went great with this Peruvian Green Sauce recipe.

“In the beginning, I used to just use my air fryer for tater tots and french fries,” says author Roxanne Wuss, who co-wrote, with Kathy Moore, the new cookbook, The Easy Hairdryer Cookbook (The American Diabetes Association, 2019). “But I became the biggest convert once I started trying foods like fish and vegetables.
Wuss says that air frying vegetables intensifies their flavor, much like roasting does, and makes them appealingly crunchy, like snack foods. “In some of our recipes we suggest you just very lightly spritz the food with a vegetable oil spray.

Editor's Note: These recipes are from The Easy Hairdryer Cookbook by Kathy Moore and Roxanne Wuss, ©2019. Our tests of two dozen air fryers found that all can turn out nicely cooked food (though it doesn't taste deep-fried).
The real differences among air fryers comes down to convenience, and that's how we test them. These three high-scoring air fryers differ in several ways, which you'll see in our air fryer ratings.

I like to add salt and garlic powder to mine. Sprinkle shredded cheese on them before tossing with the season so it melts best.
08/03/2020 Followed the recipe exactly and dumped 1# into my 5 quart fryer. I am not sure the boiling water step is required but I’ll experiment some more.
11/20/2021 Made French fries per recipe, and they were fine, but to me, they didn’t turn out any differently than just slicing up the potatoes, tossing them with oil, and air frying them. The soaking and boiling and cooling and drying were more work and time for no gain I could perceive.
06/07/2020 Followed recipe except I added some turmeric for color and a bit of smoked paprika. I added sea salt right before serving.
