Air Fryer Zucchini Sticks

Usually, you would be instructed to place them in the air fryer in one layer and cook them in two batches. However, this method allows you to cook all of them at once without worrying about the side effects.

I normally associate any kind of breaded foods with deep-frying. Although I often make baked schnitzel or pinko chicken in the oven, still, the first thought when thinking about breading is deep-frying.

Not only because of the amounts of oil involved, but also because of the mess, the fat that I have to discard somewhere afterward, the smell and so on. Although I only have it for a couple of months now, I have been using it extensively, there is hardly any other extra kitchen gadget that I use that often nowadays.

I use a Lesser Hairdryer XXL to make this recipe. All-purpose flour, eggs, breadcrumbs, Parmesan, and spices for the breading.

Making air fried zucchini is really easy. Season and bread the sticks, place them in the air fryer and cook turning once.

I think that “turning once” is the “hardest/ annoying” part of the recipe… otherwise, this cannot be easier. Cut the vegetables into sticks, about 4 cm/ 1 ½ inches long.

Mix well with 2 tablespoons freshly grated Parmesan, salt, and pepper. Arranging the pieces this way will allow them all to become nice and crispy without you having to cook them in two batches.

Spray again and air fry the zucchini for 5 minutes. Carefully remove the first layer of zucchini from the basket (using tongs) and place them on a large plate.

Return the sticks from the plate back to the basket, arranging them again in the opposite direction, but making sure that they are lying on the other side as well. Serve the air fryer zucchini as a light meal with a dip of your choice.

Place the breadcrumbs on another large plate and mix with Parmesan, salt, and pepper. Place a layer of breaded zucchini in the basket (it is hot!).

Spray again and air fry the zucchini for 5 minutes. Carefully remove the first layer of zucchini from the basket (using tongs) and place them on a large plate.

Gently flip the zucchini that are still in the basket on the other side. Return the sticks from the plate back to the basket, arranging them again in the opposite direction, but making sure that they are lying on the other side as well.

In a shallow bowl, add 1/4 cup Italian breadcrumbs, 1/4 cup Parmesan cheese, 1/2 teaspoon garlic powder, 1/4 both teaspoon onion powder and paprika, and 1/4 teaspoon both kosher salt and black pepper. Transfer the zucchini into the bowl with the Parmesan and breadcrumbs and toss to coat.

Place on a wire rack, repeat with remaining zucchini and preheat your air fryer to 390°. An air fryer is a counter top appliance that requires less oil (anything from a few spritz to 1 tablespoon) yet produces crispy food that rivals most deep-fried foods.

In the meantime, make the basil ketchup by measuring and adding 1/2 cup ketchup plus 1/3 cup basil (loosely packed), 1 clove chopped garlic and some black pepper. Pour into a bowl and serve with your crispy zucchini fries.

In a shallow bowl, add the Italian breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, kosher salt and black pepper. Crack the egg into a separate bowl, whisk to combine.

Work in batches, dipping the zucchini in the egg and letting any excess drip back into the bowl before adding them to the bowl with the Parmesan breadcrumbs. Roll to coat and transfer to a wire rack and repeat with remaining zucchini.

Use tongs or tip out onto a platter and repeat with remaining zucchini fries. In the bowl of your mini food process, add ketchup, basil, garlic and black pepper.

Next time, I’ll aim for about 1/8” thickness, so I'll get more of the zucchini taste. These were crispy, crunchy good, and the Parmesan flavor in the breading really shines through.

Instead of marinara, I served with Sun-Dried Tomato Dip, another good recipe on this site. Always looking for tasty air fryer recipes, and this one will be added to my collection.

11/24/2019 I am new to air frying, so I followed the recipe as written using the suggestion to cut them 1/8” thick. The zucchini chips were good and I served them with marinara sauce.

By themselves, they were a bit bland since there was only Parmesan and pinko. Next time, I will add a some salt and pepper.

I had way more pinko mixture than I needed, so will adjust that quantity down or double the amount of zucchini. Perhaps what I think of as a medium zucchini is smaller than the writer’s definition.

11/23/2019 Update: I instead of salt and pepper, I used an Italian Seasoning blend. Since it was the kind you grind fresh, I didn’t measure, I just added enough by sight to the pinko and Parmesan.

Also, I used the same pinko mixture on boneless skinless chicken thighs. I seasoned the chicken with salt, pepper and the same Italian seasoning and let it sit for 10 minutes.

I then dipped the chicken in egg and dredged it through the pinko mixture to cover. I cooked them in a preheater air fryer at 400 degrees for 20 minutes.

I flipped them halfway through to insure even browning on both sides. 01/28/2019 Wonderful and I used half the cheese with a little salt and pepper added to the flour.

04/22/2019 This is the only thing I have made in my air fried that I didn't like. Only change I made was the addition of salt.

I added a pinch of cayenne for an extra pop and cooked for 12 minutes without turning over. 01/29/2019 Great recipe...did sprinkle salt over slices before I started the fryer.
