When you bake them in the air fryer they get so nice and crispy and it takes only 25 minutes. This is a really easy low-carb recipe because you only need 4 ingredients and you can prepare them in a few minutes.

I went to a bigger grocery store and looked for the brand with the fewest carbs and chose the ones pictured below. The bacon I used below was thin enough to stretch and lay nice and flat around the chicken thighs.

Thick bacon would be hard to work with and might take longer to crisp. Next add a little shredded cheese in the middle and a few slices of roasted peppers on top.

Fold the chicken thigh over and then gently wrap it together with a piece of bacon. Spray the cooking basket of your air fryer and place the chicken bundles seam side down.

They are pretty simple but the bacon and cheese are just so salty and gooey and go well with the sweet peppers and chicken. You could also use boneless, skinless chicken breasts but make sure they are very thin.

Try to use a medium to thin slice of bacon so that it wraps the chicken thighs nicely and stays in place. The thicker slice might not stay put when you bend it to wrap around the chicken.

Mix and massage the meat until the liquids are absorbed and the chicken is evenly coated with the seasonings. Place chicken thighs on the rack, top side up, lose bacon strip ends tucked underneath.

Flip and cook for another 5-8 minutes or until the tops are crispy and the chicken has reached at least 165F internal temperature. Note: the timings may vary from air fryer to air fryer so start checking early the first time you cook these thighs and adjust as needed.

The chicken still came out juicy and delicious even though cooking it for the recommended time resulted in an internal temp of 185 degrees. I will definitely make this again but may reduce the cooking time a bit.
