The resulted in pancakes that did brown at the top and bottom, but also became a little dry and not as soft and fluffy as I wanted them to be. But with oven-baked pancakes you have to pick an optimum of either super light and fluffy texture, or browned, caramelized surface.

Make your weekend mornings easier with these Sheet Pan Pancakes! Common Measurement Conversions Line a sheet pan (about 18" x 13") with parchment paper and brush the bottom with 1 tbsp of butter (or more).

Combine and eggs, buttermilk, vanilla and 5 tbsp melted butter in a jug and whisk to mix well. Gently shake the sheet pan to make sure that the batter is evenly spread, but do not shake or knock the pan too hard (as this may deflate the batter).

Place the sheet pan in the center of your oven and bake for 5 – 7 minutes. Brush the surface of the pancake liberally with the remaining melted butter and place it back under the broiler for 1 – 2 minutes, rotating the sheet pan halfway through, until the surface starts to turn a golden brown in color.

Remove the sheet pan pancakes from the oven as soon as they turn golden brown. Cut the pancakes (while they are hot) into 8 (large), or 12 (medium), or 16 (small) portions.

Experienced and amateur bakers alike often confuse them due to their similar names and appearances. Formerly known as sodium bicarbonate, it’s a white crystalline powder that is naturally alkaline, or basic ().

Baking soda becomes activated when it’s combined with both an acidic ingredient and a liquid. Upon activation, carbon dioxide is produced, which allows baked goods to rise and become light and fluffy ().

This is why recipes that include baking soda will also list an acidic ingredient, such as lemon juice or buttermilk (2, 3). It’s added as a buffer to prevent the acid and base from activating during storage.

Similarly to how baking soda reacts with water and an acidic ingredient, the acid in baking powder reacts with sodium bicarbonate and releases carbon dioxide once it’s combined with a liquid (4). Single- and double-acting baking powders are available, though single-acting varieties are typically only used by food manufacturers and not usually available for household use (5).

This means the powder creates two separate reactions: initially, when combined with liquid at room temperature, and secondly, once the mixture is heated. For many recipes, an extended reaction is favorable, so the leavening, or rising, doesn’t happen all at once.

Summary Baking powder is a complete leavening agent, meaning it contains both sodium bicarbonate and an acidic ingredient. Baking soda is used in recipes that also include an acidic ingredient, such as cream of tartar, buttermilk, or citrus juice.

To produce a desirable baked good, you need to find the right balance between acid and base. Typically, this is because the recipe contains an acid that needs to be offset by the baking soda but may not be enough to completely leaven the product.
