No less than six chefs we spoke with declared their unending love for Lodge, and if you already own its skillet, consider stocking up on its equally beloved griddle and its “double” Dutch oven. “Bacon, eggs, hash browns, handmade tortillas, pressed sandwiches, searing meat and fish.
If you’re the kind of person who likes a quick, no-fuss breakfast that you can clean up in a jiffy, you’re going to need a dependable nonstick frying pan. Robert Guion, the chef and owner of restaurant Public Display of Affection in Brooklyn, swears by his All-Clad.
“I use the All-Clad three-quart because it’s perfect to cook one or two portions of risotto,” says chef Jamie Knot of the Saddle River Inn & Cellar. Chef Brandon Jew of Mister Jim’s and Mamahuhu loves the Camacho, which has been produced in Japan by Tuamotu Pottery since 1864.
“The pot can go over a low flame on the stove, but recently I took it camping with me and was able to cook rice over an indirect campfire. “A large sauté pan with two-thirds-inch sides is the most important pot you should own,” says chef Tony Palace of Jackson’s Eatery.
This has caused me to be reluctant in spending a higher amount on better quality cookware sets. In the professional kitchen, longevity and durability are the requirements for cookware.
They are abused, exposed to high heat and direct flame, and washed with harsh cleaning chemicals. Quick Navigation For your home use, standing up to this type of abuse is not nearly as important.
For instance, I never buy a frying pan or pot that cannot be moved from stove top to oven because that is an important feature to have that many advanced dishes call for such as duck or reverse searing a steak. Proper cookware is the difference between simple recipes and disaster.
On the other hand, over the top expensive models can lose their versatility because of perceived fragility. Choosing the proper cookware set doesn’t have to be hard.
My time as a professional cook has given me the opportunity to use both commercial and consumer sets. We will go over several sets that I would recommend for all skill levels and price points.
As with most things, it is best to find the right price point for the best value and that is our goal with this comprehensive cookware set guide. Be mindful when making your purchasing decision that you do not opt for a cheaper set that will cause grief down the line.
It has a reasonable price, clocking in at $214.99 USD for the 12-piece set. Its triple-ply design offers good heat conduction and uniform cooking.
Triple-Ply Design Aluminum Core 12-Piece Set Quality Consumer Brand It is always the dream of the chef to have these types of high-quality products in the kitchen but due to price, it is usually left for consumer buyers.
It is layered alternately with aluminum and stainless steel, providing an unmatched conductive and even heating product. Much of what you end up paying for in high-end cookware is the layering and quality of the material.
Another Cuisinart cookware set, but this one is on the lower end of the spectrum. It is very hard to find quality cookware set at entry-level pricing that I can be confident in recommending.
This means a thin cookware set will require careful management of temperature. If you are looking to have stainless steel cookware set on a budget, this is a good choice.
Upon receiving the set, you are greeted with a brilliantly laid out packaging that slowly introduces you to each new piece, like unraveling layers of surprises. It comes with a very practical cloth hanger that solves the problem of finding a place to store your lids.
Another addition is the vertical storage option available to store your pots and pans upright on a counter. The set is heavy, with a very solid core and heats evenly.
The long handles provide important leverage for heavier cooking. 7-Piece Set Comes with ability to hang lids on wall/fridge Storage issues are solved A must-have for those with small kitchen space.
Clifton Cookware Set 1876788 Contemporary Hard-Anodized Aluminum Nonstick Their cookware is prevalent in professional kitchens, and they are thought of as a low-cost option.
Fleischer & Wolf Seville Hammered Copper 10-Piece Cookware Set There are only a few reasons why one would choose the best copper cookware set and that is for show.
The reason being is that the level of abuse pots and pans tend to go through can be large. Many of the companies that we choose to have built their reputations through commercial cookware sets and products.
Cookware needs to be useful for many applications such as stove-to-oven use, high heat, and cleaning resistant. Although material plays a big role in these things, quality and durability impact a much larger scale.
Getting the best bang for your buck can be difficult when choosing the right cookware set. Copper pan set cookware is unsurpassed when you are cooking sugar and fruit mixtures.
If you are a restaurateur who is cooking with sugars or desserts, copper cookware may be a good investment. Copper is a beautiful material that has significant weight, but unmatched heat transfer.
Because copper reacts with some foods, it typically has a tin lining which is soft and can easily be scratched. Because of these deficiencies in copper cookware, you will find products layered.
Aluminum is a soft metal and it is important that it handled properly to avoid dents. Many essential kitchen tools guides include stainless steel pots and pans.
Such cookware gives the rapid, uniform heat conductivity of copper and aluminum. Cast Iron Cast-iron cookware distributes heat evenly and holds high temperatures very well.
If using in a commercial kitchen, keep it properly conditioned and dry to prevent rust. Tempered glass is suitable for microwave cooking, as long as it does not have any metal on it.
Thorough cleaning and total shut down occurs if glass breaks in a commercial kitchen. Quick temperature changes can cause the ceramic cookware to crack or shatter.
The enamel can chip or crack easily, providing areas for bacteria to grow. Also, chemicals used to bond the enamel to the cookware can cause food poisoning if ingested.
Non-stick Coatings Without affecting a metal’s ability to conduct heat, a plastic known as Teflon and Silverstone may be applied to many types of cookware. It provides a slippery, nonreactive finish that prevents food from sticking and allows the use of less fat in cooking.
Do not use non-stick cookware on high heat and be mindful not to use metal utensils as it can scratch or chip the coating. If the bottom of a pan is warped (which can create hot spots that burn food), or if handles are loose or broken, it’s time to shop.
We buy and test cookware sets ranging from less than $100 to $600 or more, from well-known brands such as All-Clad, Anglo, Clifton, Cuisinart, and Willing J.A. Heckles, as well as sets sold under the names of celebrity cooks like Ayesha Curry, Rachel Ray, and the Pioneer Woman.
CR’s take: The 12-piece Cuisinart Green Gourmet nonstick set aces all our key cooking tests. We were able to easily maintain sauce at a low simmer, and the 6-quart Dutch oven quickly brings water to a near-boil.
With Excellent ratings on both our cooking evenness and speed of heating tests, the Greenspan stands up to the competition. The coating appears pebbly, but that doesn’t affect its nonstick properties, and we effortlessly cooked pancakes and eggs.
Cooking evenness is superb, and this 8-piece set aces our speed of heating test by quickly bringing 4 quarts of water to a near-boil in the 5-quart stockpot. The surface stands up to our durability test, in which we rub steel wool over the coating 2,000 times, earning a Very Good rating.
Simmering a sauce produces impressive results, and this set earns a Very Good rating for cooking evenness. Heckles Motion Grey is made of anodized aluminum and works with any type of range.
Simmering in the saucepan, however, is only so-so, and the eggs needed nudging out of the pan in our food release test. Clifton designed this set so that it stacks and nests, which frees up precious cabinet space.
The Clifton Premier Space Saving 8-piece stainless set earns a Very Good rating in our evenness tests, like our other top performers in this category. The stainless handles are long and sturdy, and you can use these dishwasher-safe pots and pans on any type of range, including induction.
It earns an Excellent rating on our cooking evenness test, and when we brought 4 quarts of water to a near-boil in the 6-quart stockpot, speed of heating was also impressive. Its performance in our food release test, however, was subpar, so if you like to fry eggs, you may want to stick to a nonstick skillet.
Knowing that I wanted to be a journalist from a young age, I decided to spiff up my byline by adding the middle initials “H.J.” These tools are essential to our daily sustenance, so you must assess the kind of materials used to construct your cookware.
Modern testing has shown that some materials and chemicals popularly used for cookware have signs of potential health risks. This is because they are toxic and tend to react with your food ingredients; a prime example of such a chemical is Teflon (Polytetrafluoroethylene, PTFE), which can cause flu-like symptoms when ingested.

We recognize that it can be quite difficult and stressful for you to gather this knowledge, which is why we have provided some materials you can purchase without having to worry about any adverse health effects. Stainless steel is a metal alloy with iron, nickel, and chrome, making up a part of its composition.
Too much nickel in the cookware can result in leaching when cooking acidic food ingredients like tomato sauce. Cookware built using stainless steel is incredibly durable, with enhanced resistance to rust and corrosion.
Stainless steel can also distribute heat evenly over the surface of your cookware, making sure every part of your meal is properly cooked. They are quite easy to clean and maintain with minimal effort; if you are going for stainless steel cookware, be sure to get a high-quality model with an aluminum core for enhanced heat conduction.
Ceramic cookware is more eco-friendly, but there are consumer reports that it doesn’t conduct heat evenly across every part of the surface. Cast iron is designed to last for a very long period; they can distribute and retain heat efficiently and evenly.
However, if you are not anemic, then it’s recommended that you switch between other kinds of cookware to avoid excessive iron consumption. Any damage to the surface leaves your food exposed to the Aluminum underneath the anodized layer.
Consumers are getting more concerned about the toxicity of their cookware set, procuring the safest materials and brands is the best way to minimize any potential risks to your health. Cooking with toxic materials releases harmful gases and chemicals into your food, which is likely to cause severe health issues when ingested continuously.

Last update on 2020-09-26 / Affiliate links / Images from Amazon Product Advertising API Pots and pans are available in a wide array of materials, with and without nonstick finishes, and there are distinct differences between the various offerings when it comes to how they cook and their ease of use.
While sets are sold at a huge range of prices, you don’t have to spend top dollar to get a dependable one that you’ll find a pleasure to cook with. Copper cookware heats the most evenly and is the most responsive (meaning, take your pan of hollandaise off the burner and it stops cooking immediately so there’s no danger it will curdle).
But copper is super pricey and requires a lot of upkeep if you want to maintain its bright, shiny finish. The vast majority of aluminum cookware has some kind of finish, either enamel or nonstick, to prevent this from happening and also make it easier to clean.
Some aluminum pans are hard-anodized, which means they’ve undergone an electrochemical process that strengthens and darkens the metal, protecting if from denting and stopping it from interacting with whatever you’re cooking. That might not bother you if you bought an inexpensive omelet pan but can be upsetting if you’ve invested in an expensive set.
Keep in mind that some items are lids and sometimes the manufacturer throws in a few plastic utensils and adds them to the piece count. We give points to sets that include a 12-incher as it’s such a versatile pan for frying, stir-frying and one-pot dishes like paella or chicken with dumplings.
Every set will also include one or two saucepans and again, larger ones are more useful as you can warm a cup of soup in a 3-quart pot but might not be able to make enough rice for the whole family in a 1-quart. To select our best cookware sets, we relied on our years of rustling pots and pan both in our test kitchens and on our own home stoves.
Before becoming a cooking tools expert, she spent seven years working as a professional chef in New York City restaurants. In her free time, she's busy baking sourdough bread and rustling pots and pans on her own stove.

Cuisinart is a solid brand, so we know you’ll love their G12 GreenCourmet cookware set. These hard-anodized aluminum pots and pans spread heat evenly making for a superior cooking experience.
Reasons to avoid Rachel Ray’s China Nonstick Cookware set is as durable as it is stylish. Made from aluminum and a hard enamel porcelain exterior, these pots and pans will hold up quite well as you bang around the kitchen.
Reasons to avoid There is something elegant about the Clifton 10-piece cookware set, and yet, it goes well beyond style and offers high-quality performance too. Clifton has outfitted each product with two nonstick layers ensuring an easier clean-up process and more durability for long-term use.
Like many of the others on this list, these pots and pans are made with hard-anodized aluminum construction, but the handles are covered in silicone which keeps them cool to the touch. This cookware set is for those who are obsessed with cooking shows, love to make meals for family and friends, and have Pinterest boards full of recipes.
Reasons to avoid Like all things home-related, the cookware industry has been flooded with new direct-to-consumer brands over the last few years. These new additions all claim to be upgraded versions of the offerings that have been on the market for years -- think All-Clad and Cuisinart, but without the quite-so-hefty price tag.
We especially loved the nonstick skillet, which evenly browned taco meat and made flipping an omelet a cinch The surface is scratch and chip resistant, so it's safe, too. The stainless steel and aluminum pots and pans are quick to heat and can be placed in ovens up to 350 degrees.
If all that wasn’t enough, you’ll be cooking in style with the bell-shaped lid with attractive knobs and rolled rims. That said, some products are made better than others and if you don't invest in a high-quality set, the non-stick coating may break down, get scratched, or flake off into your food which isn’t a good thing.
Just remember that cast iron takes a long time to heat up and won’t cool down as quickly as some recipes call for. They also hold in heat and take longer to cool down like cast iron cookware.
Like stainless steel, it heats up and cools down quickly so you can cook every item properly. It does, unfortunately, make for expensive cookware and does require special care so that it doesn’t patina over time.
Our editors independently research, test, and recommend the best products; you can learn more about our review process here. A set of brand-new pots and pans are one of the most important items on a registry, and yet many of us don’t quite understand what we're looking for.
From the best omelet pan to wow guests at brunch to the perfect baking dish for your famous mac and cheese, you'll have all the information you need to choose the set that right for you. These pots and pans should stay in good shape for decades and with the high shine, they’re nice enough to go from stove top to table.
Stainless is also super versatile, so this type of cookware is a major workhorse that can help prep anything from roast chicken to pasta sauce. The only major downsides are that they can be a little more pricey than some other varieties, and they’re harder to clean (you’ll probably want some nonstick items in your registry too).
It’s a good conductor of heat (the material is often used in the core of stainless steel cookware), is strong, and lightweight. It can also have a poor reaction with acidic foods, but many of these issues are solved in anodized aluminum, which has been treated with a hardening agent.
Copper is the best heat conductor among the bunch, which means pans get hot fast and cook food evenly. It’s also extremely precise, so if you’re the type of cook to whip up a finicky sauce, these pots and pans will have your back.
The biggest cons of copper are that they need to be hand-washed, they dent easily, and over the years develops a patina that you’ll need to keep polishing off (unless you're into the rustic look). Nonstick items are suitable for any cook top, can usually go in the oven (just check the handle material), and typically requires little to no oil for cooking, so it can help make your meals a little healthier.
It's nonstick, but the coating is made out of a material called Thermal, which doesn’t require the use of any potentially toxic chemicals. Ceramic conducts heat evenly, is easy to clean, and pretty affordable, so it’s popping up in tons of retailers.
The material works on both standard and induction cook tops, and conducts heat fast and efficiently. Like cast iron, it’s fairly nonstick, reacts to changes in heat quickly, and needs to be hand washed and carefully seasoned.
