The three winners earned points for great maneuverability, aesthetics and included extras. The knives stayed sharp through our multitude of tests, and we were big fans of the cushion-grip handles that kept them from slipping, as well as the classic look of the chestnut-stained wood block.

If you’re looking for a complete knife set you’ll be proud of at a price that won’t put a dent in your savings account, this is the clear winner. If you’d like to step things up a few notches, it’s hard to go wrong with the Willing Pro 7-Piece Knife Block Set.

Complete with four knives all forged from a single piece of high-carbon stainless steel, the precision-honed blades are extra-sharp, stylish and just feel really nice in your hand. But if you’re looking to make an investment in your kitchen tools, we can’t think of a better place to start.

At first blush, we didn’t think we’d like the poly padded handles, but they were actually extremely comfortable and kept the knives from slipping, even after they had just been hand-washed. Plus, it is exceptionally sharp and took practically zero effort to drag through a few-days-old loaf of crusty bread, take the rind off a cantaloupe or slice berthing pieces from a tender tomato or peach, earning it more points than the Willing or Author versions.

After plenty of chopping, slicing and dicing, the Chicago Cutlery knives remained as sharp as their brand-new counterparts. Also putting Chicago over the top were all the extras: The steak knives performed great while slicing through grilled filet Mignon and the two Santos knives were handy for slicing cheese, mincing garlic and scooping everything off the cutting board.

They’re great for chopping soft or sticky things like meat, veggies, herbs and cheese and for scooping food off your cutting board, thanks to their wide blade.) When you’re seeking out knives that are super sharp, durable, ergonomic and will last a lifetime, we highly suggest you stop and give this standout set a good look.

Heckles, which was founded back in 1731, also takes into account the benefits of both Western and Asian knife design. For example, the chef’s knife blade has a broad curve to allow for a Western-style rocking motion, but a straight back that aligns with the Asian chopping style.

They’re forged from a single piece of high-carbon stainless steel, making them harder and sharper than many other models. Lasers are then used to angle the edges of the blades for precision sharpness, and the process seems to have succeeded.

The chef’s knife, which was our favorite from the Willing set, for one, practically dropped through a head of lettuce, and easily sliced through carrots, onions, herbs and more. In fact, it seemed more like a utility knife, and the oversized blade, while very sharp, made it difficult to core a tomato or hull a strawberry.

Thinner than other knives we tested, the handles fit perfectly in a woman’s hand, but our male tester wished they were a smudge more substantial. It glided through onions, potatoes and tomatoes, took the corn off the cob with ease and sliced through the tough rind of a pineapple like it was nothing.

The paring and utility knives fit comfortably into our hands and easily sliced everything we tested them on: limes, oranges, strawberries, carrots, zucchini, radishes, you name it. The serrated bread knife drew right through our baguette loaves, making us dream of a second career as an apprentice in a French boulangerie.

The fact that the set includes just four knives and comes with a $450 price tag kept it from being our overall winner or runner-up. If you have the money to invest, however, we think the classic, elegant set will not only look like a crown jewel on your kitchen counter, but also continue to dazzle for a lifetime.

We spent weeks testing these knife sets, comparing each model by the same criteria, including overall performance, build quality, added accessories and warranty, taking detailed notes on how specific knives functioned based on everything from sharpness and materials to heft and hand-feel to how they looked and the usefulness of any included extras. We ordered two of each set so that after spending several days slicing and dicing our hearts out, we were able to compare the used knive’s sharpness to their just-out-of-the-box twins.

As avid home cooks, we already spend a significant amount of time in the kitchen, but as our dining room table became overtaken with woodblocks filled with knives to test, we quickly found ourselves continually looking for things to chop. Chef’s knife: This standard tool is made to take on most of the bigger jobs in the kitchen.

Its weight makes it easier to chop uploads of ingredients in one go, say, for a big pot of soup or to roast a bounty of potatoes and vegetables. We tested chopping through meat, onions, carrots, herbs and more, noting the knife’s design, grip, weight and general feel.

We noted the ease of drawing the blade through different food items, and also whether the knife glided through paper or snagged. So, for this knife, we cored and peeled apples and tomatoes, and minced shallots and garlic to evaluate its performance and feel.

Too many items to list, including tomatoes, hard cheese, oranges, carrots and salami, were used to test how easily this knife could live up to its name. We looked at ease of cutting through difficult foods, as well as how thin we could slice something softer, such as a tomato.

Forged knives, for example, are typically stronger than stamped, which are cut from a flat metal sheet. Full tang, meaning the blade extends through the handle, helps create balance and overall heft.

Feel: So much of handling a kitchen knife rests on how it feels in your hand, so we paid special attention to the heaviness of the blades and handles, maneuverability, weight distribution and ease of sliding the knives in and out of their blocks. While we realize taste is subjective, we noted our general reaction to how nice they looked.

Build had a maximum of 35 points: quality (15); knife feel (10); room for knuckle clearance (5); appearance (5). Handcrafted in Semi, Japan, the durable, beautiful and razor-sharp Damascus stainless steel blades had us oohing and aching at their ability to perfectly slice through everything.

The paring knife, for instance, was so sharp that as we used it to core a tomato, we found it was shaving skin off our finger from the slightest touch. Admittedly, we thought the claim that the block’s built-in ceramic sharpeners would work with each use was a gimmick, but we were quickly impressed that the knives really did seem to get sharper every time we chopped and sliced.

As far as performance, the all-stainless steel, full-tang knives handled well and felt balanced, although they did feel overly heavy in our hands. We also appreciated the fact that the handles are labeled so you can quickly grab the correct knife.

These knives scored lower on performance than most models: They weren’t as sharp, the hollow metal handles felt too light, causing an imbalance, and they tended to get slippery when wet. Besides the value price, it features lightweight, dishwasher-safe stainless steel blades that will cover your cutting needs.

We must admit, when we unboxed this midnight black set noted by the company for its “menacing design,” we were prepared to be underwhelmed. Our aesthetic biases had us thinking these would prove to be more flash than performance, though we know some will dub the highly stylized look as awesome.

The geometric design of the military-grade G10 handles actually fit really comfortably into our hands and their slight texture made slippage a non-issue. The full-tang titanium nitride-coated German steel blades were razored sharp and excellent at chopping and slicing everything we threw at them.

The curved blade of the chef’s knife was helpful in chopping, but its thinness made it feel a bit light. In fact, the heavy handles, paired with thin blades, seemed to affect the balance of the knives.

And, at a rather hefty price, it includes just five knives (chef’s, paring, utility, serrated and Santos) plus a honing steel. Then again, if your home decor is Kylo Men meets Jacques Pepin, put these on your wish list immediately.

If you know a college student who has made the move from their dorm to their first apartment, this colorful set of kitchen knives would make a fine housewarming gift. They’re BPA-free and come with matching sheaths, so they can be easily stored in a drawer, saving precious counter space.

They didn’t feel especially sharp out of the box, our fingers smashed against the cutting board as we chopped and the blades felt heavy compared to the plastic handles, which threw off the balance of the knives in our hands. Its unique, vertical tempered glass block had one family member wrinkling his nose with distaste, two teenagers dubbing it “sick” (a good thing) and one who kept waffling between “so cool” and “trying too hard.” But whether you like the looks of the glass block, no one can argue that these are great knives.

Nice and sharp out of the box, they’re made using high-carbon German steel, a bolster for support and neoprene handles with full tang, offering fairly even weight distribution. With the set, you get five knives : 8-inch chef’s, 8-inch bread, 6-inch boning, 5-inch utility and 3 1/2-inch paring, plus that controversial holder.

Made of honed, stainless steel blades and plastic curved handles with full tang, the chef’s knife was our favorite, although it felt a bit light in the hand. Overall, the knives were sharp out of the box, look nice in their wood block and come with an affordable price tag when on sale (which seems to be most of the time at most retailers).

Some of these may be affiliate based, meaning we earn small commissions (at no additional cost to you) if items are purchased. They’re an invaluable tool for the daily preparation of your meals, and decent ones are an investment that should last for years, with proper care and maintenance.

Or, if you’re just not interested in taking the time to research and buy each blade separately, a set is an easy and convenient option. It’s not uncommon for companies is to sell their second or third line products in a high-priced set, hoping the brand name alone will be enough to make a sale.

Another trick is to load the set with slight variations in size of the same style, making it seem like you’re getting lots of blades when what you’re really getting is a bunch of repeats. In this guide we’ll cover the basics of how to choose a set that will provide good quality and value, and make your prep work easier and more enjoyable.

Bolsters are not a necessary component for quality, and will be found more often in Western style knives than those of Japanese design and origin. This spot is essentially the fulcrum and takes the brunt of the stress exerted when cutting, so make sure the transition area is well-joined with no gaps.

Composites and stainless steel offer the best qualities in terms of strength and longevity while wood can become soft and rot, and bone will dry out over time, becoming brittle. Comfort and safety are also important in a good handle (and for preventing nasty accidents in your kitchen in general).

This gives a greater range of motion for different cutting techniques, and is essential for proper honing and sharpening. For safety purposes, and to maintain a sharp edge, knives should never be stored loose in a cutlery drawer.

Now, to help with your decision-making, here are reviews of five different sets with varying price points that meet most, if not all, of the components needed for quality and value. From Messermeister, we have their superbly functional, efficient, and handsome 9-piece set in the San Moritz Elite line, complete with a wooden block.

The San Moritz Elite blades are constructed from the traditional one-piece, hot-drop forging technique, and hammered from a single billet of high-carbon German steel. Using the X50CRMOV15 stainless steel alloy, they provide top quality stain resistance as well outstanding sharpness, edge retention and ease of sharpening.

This provides outstanding weight, balance, and torque for cutting through challenging pieces such as large winter squash, or sticky starches and proteins. And the San Moritz Elite line comes with the distinctive name plate at the butt-end of each handle so you can personalize your set with etched initials.

The quality of construction and craftsmanship is another highlight, with the beautiful balance, control, and stability consistently getting top marks, as does the hand-finishing. The chef’s knife is truly a work of art, ideal for rock-chopping due to the angle of the blade, the large sweet spot, and the ultra-sharp edge.

Summary The San Moritz Elite knives in this set are built to professional standards that will please the most discerning of cooks. With outstanding fit and finish, the quality is top-notch, but it’s the edges that really elevate their value, placing them head and shoulders above competitors’ pieces in the same price range.

The large and prominent edge can be seen extending up the blade for a quarter of an inch or more, which allows for cleanly slicing through foods while maintaining the integrity of ingredients.

Unique in their construction, every knife is stamped from a single, seamless piece of steel without bolster or tang. Filled with a precise amount of sand for exquisite balance, they still retain a light weight that provides comfort, and reduces hand fatigue during extended use.

And their smooth contours and seamless construction eliminate hiding spots for food and dirt, resulting in the highest levels of safety and hygiene. The stylish stainless steel block has been designed with a diagonal profile to help protect the blades, as well as for ease of removal and storage.

What Others Are Saying There aren’t a lot of reviews in for this set yet, but those customers who have written are head over heels in love with the high-caliber construction and performance of these blades. The textured handles are ergonomic and comfortable, making long sessions of food prep virtually effortless and fatigue-free for fingers, hands, wrists and forearms.

The Damascus stainless steel not only protects and supports the extremely hard cutting core, it also improves stain resistance. Lighter, thinner, and sharper than European blades, the 16° edge is exceptionally sharp and long-lasting, making it more efficient at cutting and offering consistent, precision performance.

And the wide blade is perfect for scooping food off the cutting board when transferring it to a pan or dish. Molded in a D-shape for optimal comfort, and a sure and steady grip, they’ve been fitted over a full composite tang for impressive balance and stability.

The combination honing steel has two surfaces to smoothly realign the edges of your blades, prolonging the knife’s sharpness. Not only do they cut impressively with the superb Shun edge, they also have a built-in nutcracker, jar opener, and lid lifter, a bone notch, and two screwdriver tips.

Constructed of tough and durable stainless steel and a full tang, they’re fitted with molded handles that provide stability, comfort, and a secure, nonslip grip. This essential set come to its own laminated bamboo block, with a few extra slots so you can continue to expand your collection as desired.

Bamboo provides easy-care performance that doesn’t shrink or swell like hardwoods, which makes it ideal for storing kitchen accessories. What Others Are Saying Once again, Shun gets top marks for the quality of their forged blades, creating tools that are a pleasure for home cooks to use.

A few reviewers have emphasized that learning how to use the included honing steel correctly will help to retain those super-sharp edges between actual sharpening. And the design aesthetics are another highlight, with the Damascus blades and composite wooden handles having a very attractive appearance that is retained even with repeated usage.

Summary The Shun Classic 7-piece collection is a popular choice for high-end Japanese knives that have been crafted with quality and precision. This lovely line features Damascus cladding, and each blade bears the signature hand-hammered “touching” finish.

The proprietary VG-Max alloy has more chromium for wear and corrosion resistance, enhanced levels of cobalt for greater strength, and increased tungsten for a very fine-grained steel capable of achieving an extremely fine and sharp edge. Each knife has a full composite tang, and contoured ambidextrous Lakewood handles that nestle nicely into the palm.

The kitchen shears are made of durable stainless steel with a notch on the blade for cutting through thin poultry bones, and they fully separate for easy cleaning. The interlocking screw can easily be adjusted, to change the tension to suit your personal cutting preference.

Incredibly thin and sharp blades with stylized detailing, the Premier line of knives from Shun provides exceptional cutting performance, making them a joy to handle. And they will, if mishandled even a little, betray their delicate nature with chips, breaks, and bent tips.

Advances in metallurgy and manufacturing in the last 50 years have led to an increase in quality and a decrease in price of the average kitchen cutlery set. Obviously the term “high end” is subjective, but $500 seemed to be a good starting point for what most people would consider a premium level.

The curved blade of the Pro knives makes rock chopping a bit easier. The Pro series knives are made in Solingen, Germany which is one of the two most famous knife making cities in the world.

Willing’s Sigma force one-piece precision-forged construction is well respected, and it is impressive that they have managed to offer knives made with that technique at a relatively affordable price point. The remarkable durability of the steel used on this set is due in part to Willing’s Fríður ice hardening process which has proved to be more than marketing speak.

Tangshan is a relatively new kitchenware company that has jumped into the cutlery game in a big way. Recently they released their high-end TC series of knives that are made with a great Swedish Sandpit steel that has excellent edge retention and is incredibly durable.

While the high quality steel is a big plus for this knife set, it is really the design of the knives that make them worthy of this list. However, based on the materials used and the feel of the knives I would guess that they will last for a very long time if they are cared for properly.

Set includes the following: 3.5 paring, 4.5 utility, 5.5 prep, 5.5 serrated utility, 6 slicer, 6 curved boning, 6 chef, 6 carving fork, 6.5 hollow edge Nair, 7 hollow edge Santos, 7 meat cleaver, 8 chef’s knife, 9 bread knife, 9 hollow edge slicing, eight 4.5 steak knives, 10 ceramic honing rod, stainless steel kitchen shears and 24 slot dark ash knife blocks. It is an excellent upgrade from the quality German steels that are used by many of the other sets listed in this article. The steel used in this Nexus set of knives is impressive, but that alone does not justify the price tag.

The aggressive tapering of the handle is a break from classic knife design, but it really seems to add to the overall comfort. If you buy this set I highly recommend you have it professionally sharpened to ensure it keeps it’s 15 degree edge unless of course you are great with a whetstone.

All the careful crafting and thin edges from Shun rolled up into a student set makes for an impressive start for anyone looking to carve their way into the professional arena. While it’s admittedly a lot more than a student might need when their first going into culinary school, it would certainly provide a big head start in handling high-quality tools.

It provides a good mix of western and Japanese style knives, opening the beginning options of a few different culinary worlds. Author went to great pains to make sure the Iron series is easy to maintain and well-balanced.

You won’t find the same out-of-box sharpness as the Japanese sets, but with that you get some incredible edge retention. The Author Classic Iron 14-Piece Set is offered in a variety of blocks including walnut, acacia and cherry.

The precision edge technology is reserved for Author’s premium knives that are designated with the Classic Iron title. Author also forges metal end caps at the butt of the handle to give the knives their impressive balance.

While the Classic Iron handles are not as visually appealing as some other high-end knife sets, they are sturdy, secure and comfortable. The most obvious difference is the crème colored handles of this set that I think looks great, but that is certainly subjective.

Author Classic Crème Iron steak knives can be purchased separately in a set of four or six. The included storage block for the 7-piece set has six empty steak knife slots.

Matching Author Crème Steak Knives can be purchased separately in a set of six or four (pictured above). Even the steak knives provide good bang for the buck from both a performance and durability standpoint.

It is designed to sit in the corner of a counter, so only two sides of the storage block contain knives. The backside is empty and a little wide, so if this block is not in a corner it sits out a ways from the wall or edge of the counter.

If space is an issue and/or you don’t have a kitchen counter corner available this block may not be ideal. The size of the block can be decreased by removing the two steak knives sections which is a feature I hope other companies adopt.

It is no surprise that Hammer Stahl makes a good carving knife, because they have been active in the barbecue world for many years. Hammer Stahl calls these knives' quad tang, because the steel is exposed on all four sides.

He and his firm are responsible for some of the most functional and visually appealing products and buildings in the world. In order to match great design with top-of-the-line quality, J. A Heckles chose Consider 30 stainless steel for this set which is one of the highest quality knife steels, but it is rarely found in kitchen cutlery due to its high cost.

Heckles pulled out all the stops when they designed the 1731 series and the $2400 price tag reflects that. Henkel’s proprietary tempering process called Fríður ice hardening.

This set is made with a polyoxymethylene (you can just call it POM) material similar to what Author uses on their Iron series knives. The block also comes with 7 empty slots, so this is definitely a strong start to creating your own set down the road.

They are still well-balanced, and widely praised for being comfortable, so the weight really only becomes an issue if you’re using these knives professionally on long shifts. So while these knives are incredibly sharp, and will hold that edge for a long time, that wider mass of material will make fine cutting a little sloppier.

It would be nice if they would offer more options when it comes to the wood block knife holder like some other high-end brands do, but Messermeister seems to be very focused on the knives themselves which is good. Lawson is an American Cutlery company that has been producing quality knives for over 183 years.

To their credit they have continued to update their manufacturing and heat treatment processes to ensure their knives are competitive with the big name brands from Germany and Japan. The combination of old school craftsmanship and modern production methods is evident in their Premiere Forged knife series.

Lawson backs up their quality claims with a confidence boosting forever warranty. The upside of this fact is that the blades of these knives will be more likely to roll or bend a bit rather chip.

In short these knives will need to be sharpened a little more regularly, but they are less likely to suffer permanent damage from hitting a hard bone or surface. The Premiere Forged series of knives are available with three different handle options: Fire, Silver and Rosewood.

But if they really, truly loved this person, they would pause, consider the action they were about to take, and put away their method of payment. This is why every time you gift us a Star Trek pizza cutter, a pair of onion goggles, or pretty much anything on lists like these, we tend to do that thing where we force a smile and say “Oh cool, this is so cool, and secretly wonder to whom we can promptly re-gift this ultimately useless piece of cooking crap.

Here I am thinking, by the size of the box, that you were giving me a leg of Jason Iberian. The only way I would be able to afford that scenario is if I somehow re-sell this $800 set for full price to some club who doesn’t understand that 90 percent of these knives are completely useless.

A chef's knife can slice through onions quickly so that you won't have to humiliate yourself by donning goggles. A chef’s knife, if it’s sharp enough, can slice through bread with ease.

Okay, yes, a pairing knife is handy for little kitchen tasks, such as removing the stem nub out of a tomato or peeling the rind off citrus, but a chef’s knife can perform these jobs, too, if not in slightly different ways. You also absolutely don’t need that giant honking knife block that comes with the set either.

Victorinox also sells a pretty dang good one at an even less expensive price. This is all to say that good home cooks likely already not only know all this, but they already own a great chef’s knife.

So, Aunt Edna, as much as I love your kind and gentle spirit, next year how about that leg of Jason Iberian? This content is created and maintained by a third party, and imported onto this page to help users provide their email addresses.

The single most important tool in any kitchen (home or professional) is a chef’s knife. With its large wide blade, pointed tip, and heavy rear, it’s truly all-purpose.

And you can use the tip for smaller jobs (like dicing a shallot) and the back of the knife like a cleaver for hacking through bones. With the wide side of the blade, you can smash garlic, scoop up diced veggies to transfer them to a pot, or whack chicken breasts to flatten them into cutlets.

Blade quality : Most knives you’ll be looking at are probably either stamped (machine-made using a cookie-cutter model) or forged (which are more labor-intensive to make and usually cost more). Eight inches is easy to control and long enough for mincing a bunch of parsley at once or even slicing a turkey breast.

However, if you prefer to pinch grip the way the chefs do, by holding the very back of the blade between your thumb and index finger, you’ll find the blade is rounded and comfy just at the spot where you place your fingers. Just be sure to place it in the basket or a shelf with the blade pointing down and to be careful when you’re unloading the machine.

That being said, the shape of the handle makes it easy to choke up on and have a proper pinch grip, so I did feel very comfortable holding it,” says Lifestyle Editor, Lauren Maser. “And the finger guide on the top of the blade (for my non-dominant hand) helped me get even more control over the knife.

Second opinions : “This knife surprised me!” says Features Director, Ariel Knudsen. “It’s lighter than what I’m used to (mostly because of the plastic handle), but it cut everything with ease and felt good in my hand (the most important thing, in my opinion).

Editor-in-Chief, Faith Durand, has also used this knife for over 10 years and raves about how comfortable it is to use, and how inexpensive it is to replace if you (as she once did!) While I really think the Author version really is just the most perfect knife, this is your best bet if you don’t want to spend more than $100.

The blade is well-rounded on the bottom, which helps it to rock back and forth beautifully when you’re using it to blitz parsley into confetti, and it has the heft you want in order to effortlessly dice onions or even deb one a chicken. If you can afford it, I strongly believe this is the best chef’s knife for any type of home cook.

Because it has a wider blade than most, you have lots of knuckle clearance above the cutting board when you’re chopping. All of these features make this the ideal knife, if you’re a serious cook who does heavy-duty kitchen prep.

And because the blade is so wide, you can scoop up a ton of food in one fell swoop when it’s time to move pieces from the cutting board to a pot. For more than 30 years, I was in charge of testing and reporting on everything from wooden spoons to connected refrigerators at the Good Housekeeping Institute.

I’ve walked the floors of every trade show and read every new product release for longer than most digital publications have existed! I’ve tested, used, and played with nearly every piece of kitchen gear (including knives) to come on the market for years.

I’ve tested what feels like every chef’s knife on the market (at all the price points, low to high!) For over 30 years, she was in charge of testing and reporting on everything from wooden spoons to connected refrigerators at Good Housekeeping.

In her free time, you’ll find her banging pots in her own kitchen. After 40 hours of research, interviews, and testing, we’re convinced the Messermeister Santa Lakewood knives offer the best value by far.

Beautiful to look at, comfortable in the hand, and as high-performing as knives six times their price, they’re great tools. The blade edges on the Messermeister Santa Lakewood knives are smooth and very sharp, capable of cutting tough steaks easily.

They feature full-tang constructions, which means a single piece of steel forms the blade, bolsters, and handle. This design, which adds to the knife’s strength and weight, isn’t commonly seen in other steak knives at this price.

If budget is a chief concern (because you need 20 settings for a wedding, for example), Chicago Cutlery’s inexpensive Walnut Tradition knives are a fine option. They’re not beautiful, but they’re well-made, and, with smooth-edged, boning-knife-like blades, they perform far, far better than the dull serrated steak knives you usually have to settle for at this price.

Our 2015 guide, researched and written by Wire cutter deputy editor Christine Car Classes, produced a wealth of information also incorporated here. Christine gathered reviews from America’s Test Kitchen (registration required), Saver, and Serious Eats ; she learned about knife styles and materials from Dexter Ewing of BLADE magazine and Howard Yourself of Bowery Kitchen Supplies ; and she spoke to Rick Fresh, then the executive chef at David Burke's Prime house in Chicago for practical advice on steak knife performance and care.

Kenji López-Alt of Serious Eats prefers a serrated blade; Rick Fresh of Chicago’s Prime house favors straight-edge, as does America’s Test Kitchen ; Saver recommends straight-edge, traditional serrated, and micro-serrated models; and Amazon customers review all three types positively. On top of all that, best is a subjective term, especially for a simple tool like a steak knife, for which look and feel are almost as important as performance.

If you’re giving them as a gift, on the other hand, you’re probably ready to splurge on knives that are beautiful to look at, but you also want to be sure they’re a delight to hold and use. There are hundreds (if not thousands) of models available; because many of them are mass-produced and sold under multiple resellers’ names, I restricted my search to well-known manufacturers’ house brands.

Insisting on straight-edge blades also eliminated a huge swath of the inexpensive and mid-priced serrated steak knife options. In fact, finding good straight-edged knives at low prices proved to be the biggest research challenge.

To these, we added last year’s pick (the Victorinox Rosewood Straight Edge Steak Knife Set), alternate (the J. A. Photo: Michelle McSwain 2015's test, Wire cutter deputy editor Christine Car Classes cooked six pounds of chuck steak and two of tenderloin, and, with her husband and two friends, used 10 different steak knives to slice them up over the course of dinner.

(China, which is much harder than steel, is rough on knife edges, and we wanted to see how our test models held up.) I also made sure that our testers were diverse: we had men and women; large people and small; experienced knife-handlers and folks who don’t give knives much thought at all.

I asked everyone for their impressions on simple performance (how well each knife cut the steaks), on feel (how well or poorly the knives fit the hand, and how flimsy or sturdy they seemed), and on looks. No other knives came close to matching their combination of performance, price, and quality of construction.

Their blade-edges are well-formed, smooth, and extremely sharp; they cut even the toughest steaks as well as knives we tested that cost five times as much, which can’t be said for most others in their price range. Their handles are finished with Lakewood, a durable resin-impregnated natural wood usually only found on more expensive knives.

And unlike any other knives we found at the price, they feature full-tang construction: A single piece of steel forms the blade, bolsters, and handle. The latter is an aesthetic concern, but an important one: 2015's test revealed that a knife weight of around 80 grams (2.7 ounces) feels just right in the hand.

POM (polyoxymethylene) is a hard, dense, strong plastic; it’s been used on classic riveted-handle kitchen knives (like these made by Author) for half a century. The Author Classic Iron steak knives aren’t cheap, but they are the cheapest of the three high-end sets that we tested.

For about $100 more, the blackwood-handled Iron steak knives come in a walnut case; it’s unfortunate that this is not an option for the standard model. The knives are not perfect by any metric: the blade-edges are coarse and uneven; at 60 grams/2 ounces, they’re a bit lighter than we’d like; and the fit-and-finish is indifferent.

In fact, they appear just to be industrial-grade boning knives with steak knife handles slapped on. They’re a great choice for outfitting a crowd, taking along on country picnics, or while car camping.

Several testers diverged from the pack on steak knife aesthetics, preferring something with cleaner, modern lines instead of the traditional look. The Opined blades are noticeably less sharp than the Messermeister and Author, but they still cut our tough test-steaks neatly and efficiently.

The beautiful handles are made of olive wood, which, in addition to being pretty, is naturally water-resistant (though not virtually waterproof, like the Lakewood on the Messermeisters; the Opines absolutely must be hand-washed). They also come in a simple cardboard case that won’t last long in your silverware drawer; you’d want to store it somewhere less trafficked like a high shelf.

Lastly, if you’re looking for something to brighten your table, Opined makes a version of this knife set that’s fitted with colored hornbeam-wood handles. You can also buy the knives open stock if you want to build your own set in different colors.

Spending a few minutes after dinner hand-washing your steak knives will go a long way toward keeping them performing well for years. You don’t need anything fancy; you just need to keep the blades protected from the wear and tear they’d suffer sitting amongst your everyday forks and spoons.

When we spoke to Rick Fresh of Prime house restaurant in 2014, he said he hadn’t re-sharpened his steak knives once in the eight years he’d owned them. There are multiple types of stainless steel, some more corrosion-resistant than others; all those used on our recommended knives (and all those used by major manufacturers) are high-performing: extremely corrosion-resistant, capable of taking and holding a sharp edge and easy to re-sharpen.

In ancient times, Damascus referred to a special type of steel created by Middle Eastern smiths. Today, Damascus simply refers to a decorative, layered type of common steel, formed by stacking slabs of different alloys, welding them into a solid block, and folding the block over itself repeatedly.

And that’s good: real rosewood (a term that refers to several tropical species) is endangered and banned from international trade. In knife making, the term “rosewood” now refers to any hardwood that’s been dyed a reddish-brown color; beech is commonly used and environmentally sound.

There’s no reason, in short, to insist on forged blades anymore, although you’ll still find them on most high-end knives. 2015's winner, the Victorinox Rosewood Straight Edge Steak Knife Set, continued to impress on performance and looks.

Unfortunately, Wire cutter buyers experienced big problems with lack of availability after we recommended them. The Shun knives are magnificent but border on ostentatious, with their mirror-polished, hammer-finished Damascus blades and decorative rear bolster.

The Authors, by contrast, are austere to a fault: The thinking behind their boring recycled-wood-fiber handles is nice, but at an MSRP of $600, surely some equally-green reclaimed walnut burl was in order. The Radar Utility Steak Knife set is very well-reviewed on Amazon, and at about $40 it’s highly affordable.

We looked at it in fall 2017, but found the aluminum handles too thin, short, and coarsely finished being comfortable. Lawson’s Straight-Edge Steak Knife set, which we also looked at in fall 2017, competes price-wise with our, the Author Iron, and comes in two color options.

The Willing Twin Cuisine II (currently unavailable) set also didn’t come with any editorial reviews, but we opted to include it in testing after trying and liking the knives at Williams-Sonoma. If you happen to be traveling through France, though, and can afford a set, we’ve read nice things about the authentic versions.
