Because of the lockdown, I don’t have bread flour and so have had to experiment with what I’ve had on hand. The first time I used 30% spelled flour and 70% adorn.

I can’t wait till I get some bread flour, as I’m sure it’ll be even better yet. I have used a combination of oats and seeds (sesame, poppy) to cover the bottom and top of the bread.

Also, since I’m out of parchment, I have been lining the slow cooker with aluminum foil, and it works totally fine. I broil at the end as suggested.

05/20/2021 I have never made leavened bread before and I decided to start with this recipe. The yeast step didn't work for me as far as creating a froth.

I poked around on the internet some and found you have to add sugar to get the yeast to activate. My yeast appeared to be dead, but I completed the recipe anyway.

I got a raw-looking (but not actually raw inside) outcome that tasted all right but was not risen. The next day I got some other yeast which I tried to activate with water, per this recipe.

Then I tried again using sugar, and I got a big froth. One hour in an airtight container and there was really no perceptible rise.

The air in the container was noticeably warm, though, so I could tell something chemical was trying to happen. Kneaded and then put in slow cooker.

2 hours later I had a loaf nearly identical to the one from the prior day. If you don't mind a barely-risen doorstop for texture and size, this recipe is OK.

This simple white bread is easy to make and uses ingredients you probably already have on hand. Out of all the bread I’ve made, this slow cooker version just might be my favorite.

I mean, who would have thought a loaf this gorgeous could be produced in a small appliance designed to slowly cook meats, vegetables, and soups. The dough is prepped the night before simply by mixing all the ingredients together.

When you wake up the dough will have developed gluten and doubled, almost tripled, in size. When you are ready to bake the bread, just turn it out onto a lightly floured surface and fold it over on itself a couple of times.

Stir with a wooden spoon until well blended and the dough forms into a ball. Cover the bowl with plastic wrap and let it set on the counter overnight, 8-18 hours.

Line the bowl of the 6-quart slow cooker with parchment paper. With well-floured hands, flatten the dough into a 9-inch circle, then fold it over onto itself and shape it into a ball.

Place a double layer of paper towel under the lid to prevent condensation from dripping onto the rolls. The fully cooked bread will have a light, soft crust.

If you desire a golden crispy crust, place the bread under the broiler for 5 minutes. Set the bread on a wire rack to cool completely before slicing.

A wonderfully hearty, slow cooker version of ribollita, the famous Tuscan stew made with bean, vegetables, dark greens, and day-old bread. Just look at the ingredient list, there's nothing fancy here, and that's part of what I love about this sort of food.

In this ribollita, for example, I like to hold back the tomatoes, kale, bread, and lemon zest until the final hour. So, in this case, I'm going for melding, and trying to avoid any overcooked flavors and textures.

Heat the olive oil, celery, garlic, carrots, red onion, red pepper flakes, and salt in a large pot over medium-high heat. If you have an Instant Pot or other multi- cooker, you can do this directly in the device.

Roughly an hour before you're ready to serve, stir in the tomatoes, kale, torn up pieces of the bread, and lemon zest. Serve reheated, or “ribollita” meaning reboiled, the next day ladled into bowls.
