Baking at home also gives you control over the quality of ingredients that go into the making of the cake. This eggless vanilla cake recipe makes it easier and fuss-free to make the classic vanilla cake for people with inhibitions over eggs that too without compromising on its flavor.

Flour and baking powder sifted together, followed by salt, sugar, butter and vanilla, pressure cooked to perfection. In a mixing bowl, sift the flour and baking powder.

Add salt, sugar, butter, water and vanilla, and beat the mixture using a wooden spoon or a beater till well blended. Heat the pressure cooker (empty), covered with the lid but without the pressure, for 3-4 minutes on high heat, then place one cake tin in it.

Close the lid without the pressure, lower the flame and let it cook until done (about 30 minutes). To maintain the texture of the cake, make sure you take extra time to beat the fat (butter or oil) and sugar mix to make more airy.

I made this cake last year Christmas but didn’t get time to post or write about it, so posting now with all the special instructions you need to follow while baking a cake in pressure cooker. First thing first, choose a cooker in which the baking pan fit in.

Take a cooker and putting a stand inside the cooker for 10-15 minutes on low flame In a pan add sugar and let it get caramelize Add 1 tablespoon of water to the caramelized sugar and stir Next add the butter to the caramelized sugar and mix really well Now remove the caramel in a bowl and add vanilla essence and Orange juice to it and mix well Next add curd and mix well Grind the spices to a fine powder and add to their wet ingredients Now add ginger powder, baking powder, baki BA soda, salt and flour to the wet ingredients Next add in the dry fruits and combine well Pour the batter in a greased and lined baking pan Bake @ PRE cooker for about 20-25 minutes Do a toothpick test before removing the pan from the cooker, else bake for another 10 minutes Once baked and removed from the cooker, let the cake cool down in the tin for 10-15 minute and then demoted Use Aluminum tray to bake Vanilla cake.

Take a bowl, Add butter and melt it using a microwave. Just make sure that you remove it from stove top as soon as the butter melts.

Add All-purpose-flour, Baking powder, Vanilla Essence and Condensed Milk in the melted butter. Beat/Mix/Whisk the mixture well using a hand blender to make a smooth paste.

Sprinkle 1 tsp of All-Purpose-Flour on all its internal walls and base evenly. Hold and rotate baking tin in a way that all the flour should make a thin layer over the greased Oil. Flour layer will help us identify if there is any space where is left ungreased with Oil.

Oil greasing helps in creating a non-sticky layer between cake and baking tin. Throw out the extra left-over flour from the tin and then add the cake paste.

Since, we are not using the whistle/weight, there is no chance of cooker building steam pressure inside it. We are First, keep the divider bowl/plate in cooker and then place the baking tin carefully on top of it.

After 30 minutes of baking, open the cooker lid and take out the cake. Normally, the baking time difference is due to the heating capacity of the Stove.

It should get separated easily with no damages to the cake ’s skin as we greased the tin with Oil. Keep it on top the baking tin and invert to bring out the cake.

So, we just made the Eggless Cake In Cooker and if you believe me, it takes less time than the one baked in Oven! The only thing is that you have to follow the steps as mentioned above and you can bake the cake easily in cooker.

But, keep in mind that the cake would start losing its softness as soon as you refrigerate it. There are multiple ways of decorating the cake with whipped cream or with chocolate sauce or any other stuff that you may want to eat it with.

You can also slice it into small marble shaped pieces and serve with evening snacks when you are having fun while sipping Chai Tea. This cake can be made easily for your kid’s birthday parties and everyone is going to love this.

It involves a little preparation with the pressure cooker to maintain temperature the same way it happens in PRE heated oven. You must be wondering how to make this super easy sponge cake in a pressure cooker.

Prior to the preparation of cake batter, first set your pressure cooker. A clean, dry pressure cooker must be filled with sand at the bottom up to 2-3 inches.

Cooker should be heated on a high flame in order to maintain a temperature as in a preheated oven. Wait for 5 minutes till you see air bubbles forming.

Place the baking tin inside the preheated cooker and cook on a low flame for around 40-45 minutes. Remove from baking tin and let it cool another hour on a wired rack.

Particularly with the younger generations who prefer to have something quick, yummy and also in small portions. This recipe is dedicated for those who do not have a microwave or traditional baking oven and like to satisfy the quench of creamy and moist cake.

Also add 3 tbsp sugar, ¼ tsp baking powder and pinch salt. Add 2 tbsp milk (if required) to form a smooth lump-free batter.

Top with 2 tbsp chocolate chip over the cake batter. You can alternatively bake in the preheated oven at 180 degree for 20 minutes.

Insert a toothpick and check if the cake has baked completely. Also, you can replace maid with wheat flour as a healthy alternative.
