That was the case with two pounds of cubed beef chuck that cooked to juicy and soft in just 20 minutes. We shredded the beef to make an open-faced sandwich topped with Swiss cheese and scallions, but the stew meat has many uses.

I mean will the food item cooked in it remain healthy? I have done 'once', I cooked a Christmas Pudding to cut down on the cooking time on Christmas day, I'd borrowed it from my neighbor, but I was very wary of it because of the pressure & steam.

One is the stove top type but it is not the kind that you have to set the weight to get the pressure you want. The electric takes up quite a bit of space on the counter, about the same as a Slow Cooker does.

I like the ease of being able to brown then set the pressure and letting it do its thing. It will not start timing until pressure is reached, the stove top one you have to be close by to hear when pressure has been reached before you start the timer.

Newer pressure cookers will rarely if ever “blow up” there are many more safety features than the old ones. Within the first month of my Mom moving into her new home, she had the bell blow off the pressure cooker and put a dent in the ceiling.

I mainly use mine for pulses (12 minutes for soaked black beans instead of 1.5 hours! ), but also stews, rice puddings, flans, frittatas, and even to steam the juice out of berries.

It takes a little practice to adjust recipes (less liquid for example), but once I got the hang of it I haven't looked back. Also, the food tastes better and can retain more nutrients as it not boiled in water but steamed at high pressure.
