Secure skin to underside of breast with toothpicks. Place chicken in slow cooker over carrots and onions, breast side up; sprinkle with seasoning mixture.

Reduce heat, cover with a lid and simmer for about 12 hours. Store the juice in a mason jar in the fridge for up to a week.
